JOINT CONTEST WINNERS OF THE PAPAYA HEALTHY RECIPE CONTEST:SUJATA BHIDE&SHRI KRIPA

Just love the brightly coloured luscious papaya fruit which is not only delicious in taste,but also a very rich source of antioxidant nutrients which can be made into fruity packs which rejuvenate the skin and hair beautifully.Truly the beauty of this wonderful plant is that all its parts have excellent medicinal &nutritive value…The ripe fruit or even the raw fruit are both storehouses of  nutrients such as carotenes,vitamin C and flavonoids; the B vitamins, folate and pantothenic acid; the minerals, potassium and magnesium; and last but not the least lots of fiber.It helps with the digestive system as well, by breaking down the proteins and supporting production of digestive enzymes.Most people relish papayas  as is,but we wanted to find more delicious ways of having it as well……..Hence we decide to run a contest for the most original,innovative&healthy recipe using either ripe or raw papaya…..All the recipes were delicious-showcasing the 2 most original winning entries for you……:)

1.WINNING ENTRY FROM SUJATA BHIDE:PAPAYA PRESERVE/JAM

Ingredients:

  • 500 g Papaya (half-ripe)
  • 2 cup sugar
  •  1 tsp Citric Acid

How to make Papaya Preserve:•Peel the papaya and remove the seeds.•Cut papaya into big pieces.•Boil the papaya pieces till tender.•In a pan, mix sugar with one cup of water.•When the sugar dissolves completely, add citric acid and boil this mixture for two to three minutes.•Once done, remove from heat and strain.•Cook over low heat, till the syrup strings a thread.•Remove from heat, cool and store in a bottle.
This yummy preserve can be relished  in any season with chapati or bread rolls, or even as a just after dinner dessert…like I do 😉

WINNING ENTRY FROM SHRI KRIPA-PAPAYA BURFI:
Ingredients:

  • 4 cups- grated raw papaya
  •  1 cup-grated coconut
  • 4 tsp-ghee
  •  1 3/4 cup sugar
  • 1 1/2 cup- milk
  •  1tsp-cardamompowder
  • Method:Take a thick bottomed pan or non stick pan ,heat ghee in this and add grated raw papaya and fry till the raw smell of papaya vanishes.After the raw smell disappears,add milk and coconut and mix. When the milk evaporates add sugar and mix well till this papaya mixture leaves the sides of the pan..When it is done pour this mixture onto a greased plate and press nicely and make flat.After it cools cut into desired shapes and serve.Yummy Papaya barfi is ready to eat!!….
